This knife is pretty sharp out of the box, there is potential for this knife to be way more sharp though if sharpened on a stone properly. I’m a sushi chef and I was looking for a beater knife that I didn’t have to worry about it being wet since it got annoying when I had to make sure my other yanagiba was always dry when it gets busy. I was kind of skeptical of these knives because 1. it’s a stainless and 2. the price. This knife is a great deal. I was surpised of how sharp it was out of the box and how sharp it can become when sharpened properly. If you decide to buy this knife, you will not be disappointed.
I sold knives of all kinds/brands, qualities and uses at retail. I also built my own knives and know a good deal about knife steel. This is a great knife. Blade is very sharp – the steel is excellent. One sided angle on blade makes paper thin slicing of raw and cooked meats easy. Just be careful not to place in dishwasher or even sink where steel can bang against other metal and dull edge. Use on wood/bamboo or poly cutting boards (no glass) and it will stay sharp for a long long time.
Handle is small for large hands, otherwise as good a slicer as is made and by far the absolute best kitchen knife available anywhere for under . I own German forged kitchen knives (these are 20+ years old and will outlast me) but they cost at least 3 – 4 times as much as the Kershaw line. Wasabi: 6621Y Wasabi means ‘Harmony and Tranquility’. This is the feelilng you’ll experience while using the incredibly sharp Wasabi knives. The Wasabi line features traditional Japanese blade styling. The single bevel design allows an incredible sharp edge that’s easy to maintain. The hollow-ground back creates an air pocket between the blade and the food being cut.
